So my kids eat a LOT of fruit. A ton. But, not as many vegetables. Sometimes this bothers me. Other days, I let it go. But today I guess it was bothering me, or I was feeling all domestic-like, but for whatever reason I whipped up these vegetable fritters. Now, don't judge and start making gagging noises like they are pinto beans or something. They are shredded veggies with a creamy avocado dipping sauce, and a miracle occurred shortly after this picture was taken. Ansley ate FIVE of them and Christian ate one, and Ansley proclaimed them "delicious!" And, they were.
