Recipe time! I made these last night, and it reminded me how extremely yummy they are. It also reminded me of how much I love cookies. This is the perfect fall cookie, with all the fall spices combined with oats....oh man they are good! They are so good, they were gone before I could take any pictures.
Except for this one. The dough is super yummy! It does have eggs in it, but does anyone listen to that rule? I eat cookie dough every chance I get.
Giant Oatmeal Spice Cookies
(recipe from Southern Living)
1 1/2 cups
all-purpose flour
1 tsp ground cinnamon
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp ground ginger
1/4 tsp ground allspice
1/8 tsp ground cloves
1 c butter, softened
1 16 oz pkg dark brown sugar
2 large eggs
1 tsp vanilla
3 c quick-cooking oats
Stir together first 7 ingredients.
Beat butter and sugar at medium speed with an electric mixer until fluffy. Add eggs and vanilla extract, beating until blended. Gradually add flour mixture, beating at low speed until blended.
Stir in oats.
Drop dough by 1/4 cupfuls onto lightly greased baking sheets; lightly press down dough.
Bake, in batches, at 350° for 12 to 14 minutes. (Cookies should not be brown around the edges, and centers will not look quite done.) Cool slightly on baking sheets. Remove to wire racks; cool completely.

I will say that these are HUGE cookies, and, if you like that, go for the huge. But it's kind of a pain to bake them because you can only bake 4-6 per pan, I have found. If they start smooshing into each other, they don't bake as evenly. So it takes a really long time to bake all those cookies, and oftentimes the middles are kinda gooey (I learned last night). So, next time I make these (which will probably be this weekend) I will just make regular sized cookies and put 12 per baking pan. They will taste the same, I'll just have to call them Oatmeal Spice Cookies. I'm okay with that.
So it's totally up to you. But, Giant or not, you must make these cookies! They are delicious! Be sure and let me know if you do. Happy baking!
